Add water to seasonings and stir well to mix. The large pouch of seasoning alone in our kit will give full flavor for 7 gallons of water added. This is just about right for a 40 to 45 pound sack of crawfish, or use 11/4 cups of seasoning per gallon of water. Add Beaucoup Lemon Seasoning and Beaucoup Peppers Seasoning packets to adjust the flavor to your personal taste. Simple tip: Measure water before adding to pot if your are not sure about volume needed. 7 gallons of water will bring the level up to the top of crawfish once basket of 40 to 45 pounds of crawfish is placed in boiling pot |

Place basket of crawfish into pot. Add vegetables if desired on top of crawfish or boil vegetables separately. Tip: Cut full size red potatoes in 1/3 for great taste. Some folks like to add corn, onions, celery, mushrooms, garlic and sausage as extras on the menu in addition to the crawfish...we love 'em all! |

Cover the pot, then light the burner and bring to a boil. Tips: We like to start the fire with everything added to a covered pot. Starting the fire with everything added to the pot covered will save money on gas and time to bring the pot to a boil. Everything gets served up hot at the same time. Placing the cooking set up out of the wind or using a wind block can speed up the time to bring to a boil. If you choose to boil your vegetables first, then once they are removed from pot, add the basket of crawfish to pot, cover and bring back to a boil. Make sure water level in pot is up to the top of crawfish. |

When a steady puffing steam starts escaping, adjust fire slightly lower so that you keep a puffing steam without liquid boiling over. Start timing for 8 minutes. Keep pot covered the entire time fire is lit to the time the boil is complete.

I like to use an inexpensive digital timer sold at most stores in the kitchen supply section. They don't hang up like some of the wind up type of timers. Adjust fire during boiling for steam to continue puffing from lid without boiling liquid over. |

When 8 minute boil time is complete, turn off fire and uncover pot. Stir pot with paddle to mix and begin 2 to 4 minute cool down time. |
